As we continue our celebration of Dr. Seuss’s birthday, we enjoy easy and delicious afternoon snacks that follow the theme of our movie. Today, we enjoyed watching The Lorax. After, we used cashew nuts as our pretend Truffula seeds and planted them in our Chocolate Chip Chocolate Pudding Mousse, or our pretend dirt. The dirt and the seeds were a delicious hit with the kids.
Recipe for Chocolate Chip Chocolate Pudding Mousse
This is a quick snack for kids or a delicious after dinner dessert. It’s simple to make and can be a nice chocolate fix that isn’t too filling.
- package with 6 servings Great Value Instant Pudding and Pie Filling Chocolate
- 2 1/2 cups Milk, 2%
- 2 cups Redi-Whip Whipped Cream
- 1 cup Toll House Semi-Sweet Chocolate Mini Morsels Chocolate Chips
If your tastes prefer more chocolate and less whipped topping, reduce the whipped cream by 1/2 and mixture will be more chocolaty. Consider topping with extra chocolate chips.
Using a wire whisk, whisk cold milk and pudding mix until powder lumps are gone and it starts to thicken. Fold in whipped cream and blend pudding and whip cream until the two colors are well blended. Fold in chocolate chips. Refrigerate for at least 1 hour and serve.
